Francis graduated from the University of Texas with a Bachelor of Science in Nutritional Sciences in Austin, Texas. She then attended the University of Texas Health Science Center in Houston, where she completed a dietetic internship in the Texas Medical Center and earned a Master in Public Health. Her master’s has a special focus on health promotion and behavioral sciences. 

She later returned to her hometown of Dallas, where she worked for six years as a registered dietitian for the UT Southwestern Solid Organ Transplant Program.
